  • 2 oz Redbreast whiskey

  • 3/4 oz freshly squeezed lime juice

  • 1/2 oz ginger lime syrup

    • 50 grams white sugar

    • 50 grams water

    • Rind of 1/2 lime (optionally, additional rind for garnish)

    • 1/4 inch fresh ginger root

  • Juice of 1 lime

  • 1 egg white

  • 1 cup ice

  • Cocktail shaker

  • Chilled martini glass or coup

  • 1 small sauce pan

  • 1 rubber spatula

  • 1 pairing knife

  • Kitchen scale

  • Citrus juicer

Make ginger syrup

 

Remove 1/2 the rind of a lime with the pairing knife.

Place sauce pan on scale and press tare button. Measure out sugar and water. Bring liquid to rapid simmer over medium heat, stirring constantly for the first few minutes to fully disclose the sugar. Continue simmering until the liquid has become a loose syrup that drips slowly off the spatula.

Off heat, add the ginger and lime rind, and let sit for 30 minutes or more. Remove the ginger and rind, and let cool completely before preparing your drink.

Juice the lime. Combine the whiskey, lime juice, syrup, and egg white in the shaker. Dry shake (i.e., without ice) vigorously for 30-60 seconds. Add ice, and shake for another 10-15 seconds. Pour through strainer into chilled martini glass. Optionally, garnish with additional lime rind.
